Everyone was slicing pork and preparing the dishes, yet Ann Sudong stood on the stage with his eyes closed for three minutes without doing anything.

I've never heard of anyone making East Slope Meat or putting plums in it. In fact, plums are rarely used in any of the dishes. Even if they were used, they would only be used for flavoring purposes.
